Kimchi & Couscous Pancake
Today, since we started this Kimchi themed recipe journey, we failed at this recipe.

The silver lining was that we finally figured out the right texture to bake it in a muffin tin.
​
So we will bring the Kimchi & Couscous mini muffins to the upcoming markets and festivals.
​
Fortunately, we did save some to make the normal pancake and it was simply delish! Here's the recipe.

We finish our week with this complete homemade Korean meal table. This is one of the reasons why I named my company "The Table for Kimchi".
In Korea, we have countless side dishes, and Kimchi (a cabbage one) just make up for 1 of them.
This time it's an eggplant side dish! It's seasonal, it's healthy and tastes delicious.

This is one hell of appetite raiser. During spring and summer in Korea, we believe that people start losing their appetite, hence affecting their stamina for heavy farm work.
So in order to maintain or regain the appetite, we have numerous vegetable dishes that are made freshly and eaten within 3 days.
The wisdom comes with what type of vegetables are suitable for this type of cooking and what type of vegetables are great for fermentation.
Cucumber, as it carries a lot water is not suited for making Kimchi and fermentation. (Pickling is different.)
Because the water will drown the micro organisms in fermentation process.

This marinated chicken will surprise your guests and friends at a dinner or BBQ. Use the weekly leftover vegetables and fruits to make your own marinade sauce. It is simple and easy to make, although takes some time.

Today we’ve been busy working on our next project *secret*, so we rushed to make a very quick lunch with this awesome Korean X Ramen.

We still made it healthy by adding spinach and an egg.
​
You can always add more, best ones would be bok choy, zucchini, cherry tomatoes with tomato paste, leeks and cabbages. (Peek inside that Farmed Today box for more ideas!)

It took some patience to bake the sweet potatoes for an hour but in the end it was sooo worth it!
In Korea, it was quite popular to have steamed sweet potatoes with deeply fermented Kimchi as a winter night snacks.

So I didn't follow instructions other than my mom's voice <3
The key is to have the right authentic well-aged Kimchi. The best kind would be older than 6 months to 2 or 3 year old.
