Ultimate Kimchi Avocado Toasty

Ingredients

Serves 2

 

Produce

2 avocados, seeded and cut into smaller pieces 
1 garlic clove, chopped
½ onion, chopped (can be smaller quantity)
1 chili pepper (optional), cut in into smaller pieces

 

Refrigerated

2 tbsp Kimchi

4 eggs (optional, depends on one’s appetite)

Oils & Vinegars

1 tbsp olive oil

Additional olive oil or butter for toasting


Bread & Baked Goods

4 large bread slices of your choice


Baking & Spices
Salt and pepper to taste

Directions

  1. Combine avocados, onion, garlic, olive oil, chili pepper (if you want to spice it up), salt and pepper in a blender or a food processor and blend them into the texture you prefer.

  2. Heat up olive oil or butter in a pan on medium-high heat.

  3. Crack open the eggs and quickly place 2 bread slices on top of them. Let the bread soak up a little bit of eggs (in our case, we focused on eggwhite) then flipped the bread to place them next to the eggs.

  4. Depending on your preference, you can scramble the eggs and cook them a little bit longer. (We make them slightly runny.)

  5. Move eggs to the side of the pan to keep them warm. Flip the bread to toast the other side. Then add 2 new bread slices to the pan.

  6. On the toasted bread, put the avocado paste, then the eggs, then top up with Kimchi.

  7. Once the toppings are placed and secured, place 2 other bread slices on top to cover. Enjoy your toasties! 

 

Tips

- Timing is everything with this one, so make sure your ingredients are prepped before you heat up the pan and stay close to it! Especially when it comes to eggs and bread, be quick, so they don’t get burned or overcooked.
- Additional toppings can be tomatoes, cheese, and fresh basil leaves.
- Please keep in mind that our Kimchi contains 17 ingredients, so you don’t have to add much more for nutritional value.
